Vegan Coconut Banana Bites

Vegan Coconut Banana Bites

3 small Bananas, ripe

2 scoops About Time Vanilla VE protein

1/3 c unsweetened shredded coconut

1/4 c sliced roasted almonds

2 T flax meal

1 T coconut oil

1 T vanilla extract

1 T cinnamon

1 t nutmeg

 

Preheat your oven to 350 degrees. Gently spray a light colored baking sheet with non stick spray. Place the shredded coconut into a small bowl and set aside. Peel and place the bananas into a large bowl, add the vanilla and mash. In a separate bowl Mix together the nutmeg, cinnamon, flax meal, almonds and protein. Add the dry mixture to the banana mixture and fold together. Melt the coconut oil and add the mixture, mix well. Using a cookie scoop, scoop the batter one cookie at a time and drop into the shredded coconut. Coat the cookie and slightly roll into a ball. Place on the sprayed tray. Repeat this process until the batter is gone. You may have a little coconut left over, just throw it away if you do. Gently press down on each cookie to flatten into a round cookie shape about 1/4 inch thick. Bake the bites about 8 minutes, turning the tray half way through the baking process. Remove from the oven and cool about 30 seconds to a minute. Remove bites from the tray and cool on a wire rack. Enjoy!
