Upside Down Pear Pound Cake

This Upside Down Pear Pound Cake is sure to please anyone. This is a naturally sweetened dense cake so moist and flavorful your guests will be asking for the recipe

Upside Down Pear Pound Cake

1 organic Pear

2 bananas- medium sized (6-7 inches long)

1 c plain Greek Yogurt

1/2 c coconut flour

1/2 c unsweetened almond milk

2 scoops About Time Birthday cake whey protein powder

2 T vanilla extract

2 T coconut oil

1 T cinnamon plus 1 t

1 T flax meal

1 t salt

Preheat your oven to 350 degrees. use a 8x8x2 square pan. spray generously with non stick spray. Slice the pear into quarters and remove the core from each. Slice the quarters in to 21 pear slices. Arrange two rows of 9 pears and 3 down the center. Sprinkle with the 1 t of cinnamon. Place into the preheated oven and bake for 15 minutes.

 

While that is baking, in a large mixing bowl add the  bananas, yogurt and vanilla extract. Mash these three products together. Then add the coconut flour, protein, 1 T cinnamon, flax meal, salt. Mix well. Add the unsweetened almond milk, blend together. melt the coconut oil in the microwave, add to the mixture and blend well.

When the pears are done, remove them from the oven and give the pan another spray of non stick spray. make sure you hit the bottom and sides. Pour the batter on top and tap pan a couple times lightly to even batter out. Place in center of the oven and bake for 35 minutes. I turned my pan every 10-12 minutes to ensure even baking.

Remove from oven and place on a wire rack to cool around 20-40 minutes. My cake was just warm to the touch in the center. I ran a knife around the edges when it first came out of the oven and again right before flipping over onto my plate.

 

TIP- the pears with have a small amount of thickened juice in the bottom causing it to stay put and not instantly falling out of pan. You may need to nudge the cake a little to fall out of pan. Tap the bottom of your pan or slightly move the cake back and forth before flipping over onto your plate.

 

I cut them into a 1 in x 4 inch finger like size and made 14 slices as an hors d’oeuvres. If this is a breakfast, cut larger
