Twice Baked Sweet Potatoes with Oranges

These Twice Baked Sweet Potatoes with Oranges are flavorful, light and airy! A great way to spruce up any meal or to serve as an amazing appetizer at a party

2 medium sized sweet potatoes

2 T coconut butter or coconut spread

1 large organic orange, using zest, juice and pulp

2 t cinnamon

a few dashes of salt

You can either use an oven or a microwave for this recipe. My microwave has a convection oven option which I used.

If using a standard oven, Preheat oven to 375. bake sweet potatoes until soft, about 40 minutes.

If using microwave cook about 6-8 minutes until soft. when completed turn on the convection oven option to 375 degrees and allow to heat up

Peel the sweet potatoes and place into a mixing bowl. Mash then with a fork until they are soft with most lumps gone

Add the coconut butter or spread, cinnamon, salt, zest from the orange, the juice and pulp of the orange.

Mix together well. Spray your baking tray with non stick spray or rub with a little coconut oil.

Choose what size you want to make these then scoop out batter. You can make them the size of cookies, or a patty etc. I used a cookie dough scooper and dropped them on the tray. You can flatten slightly if you want for a different look too.

Bake for 12-14 minutes until golden brown on the bottom. Serve and enjoy.

*You can do so many different variations to this. Add ground nuts, protein, different flavors, pomegranates etc.  it’s endless
