Triple Chocolate Pumpkin Muffins

29 oz can pumpkin

6 scoops About Time Mocha Mint

3 T Cocoa

8 packets Stevia

1 1/2 t Cinnamon

1/4 t salt

3 squares Trader Joe’s 72% Dark Chocolate bar- shave this with a knife or mince

Preheat Oven to 325 degrees. Open Pumpkin and place into a bowl. Add all ingredients except Trader Joes chocolate and stir. Fold in chocolate. Scoop mixture into a lined muffin tin. I gently spray each liner with non stick spray. Bake 27 minutes in a light colored tray. Turn Pan 180 degrees half way through cooking

Yields 15 muffins. When cooled, these muffins have a smooth dense mousse type of texture. They are fantastic with a hot drink in the morning
