Tri Color Quinoa and Garbanzo Beans


3 oz carrots sliced on a bias 1/4 inch thick

2 stalks celery

1/2 can garbanzo beans

1/2 c tri color quinoa

1 cup chicken broth

1 t fresh parsley- minced

1/2 t onion powder

1/4 t garlic powder

1/8 t black pepper

juice of 1 lemon

cook quinoa in 1 cup chicken broth with garlic and onion powder according to bag directions.

saute celery, carrots and chick peas for 4 to 5 minutes with 2 T water.

When quinoa is finished add the 2 together and stir. Squeeze lemon into mixture and add in parsley. Stir. Serves 4 as a side dish
