Toni’s favorite stuffed peppers

2 very large bell peppers

1/2 lb cooked chicken breast, shredded or chopped thin

2 cups cooked brown rice or quinoa

1 tsp fresh garlic

1/2 tsp oregano or italian seasonings

1/2 cup fat free tomato sauce or your favorite prepared marinara sauce


Cooking spray

 

Directions:

Cut tops off peppers, remove seeds.  Microwave peppers and tops for 8 minutes on high.  Mix all other ingredients together in large bowl.  Spray bottom of cooking sheet with non stick spray.  Fill peppers with chicken mixture and replace tops.  bake in 350 degree oven for aprox 30 minutes.  this recipe can be doubled or tripled. Also consider substituting your protein source with lean ground beef or ground turkey breast.  Seasonings can also be changed to make a more Mexican flare with salsa instead of tomato sauce and chili powder in place do Italian seasonings/oregano.
