Sweet Potato Souffle-Dessert-
preheat oven to 350 degrees
1 1/4 c sweet potato puree
3 scoops About Time Cinnamon Swirl whey
1/8 t salt
2 t pumpkin pie spice
3 packets Stevia
Depending on sweet potato puree consistency you might need a little almond milk. My plain puree was slightly thicker than baby food. Add by the tablespoon(1 at a time to achieve that consistency)
Mix all items together. generously spray a muffin tin- recipe yields 6 souffles
extra tip: place a piece of 72% or higher chocolate in the center-(scoop half of mixture, place in chocolate, cover with other half of mixture)
Bake 14-16 minutes, serve warm with a little coconut cream or cool and top with Greek cream cheese mixed with stevia and vanilla extract( for a frosting) and top with fruit
