This Sweet Potato casserole is a great alternative to the standard recipes loaded with marshmallows, candied apples and such. The benefit of added protein is a great bonus too!
2 large sweet potatoes
2 scoops About Time Birthday cake whey protein isolate
1/2 c unsweetened almond milk
2 T coconut spread- Olivio brand
1 T cinnamon
Preheat your oven to 350 degrees. Bake sweet potatoes until they are tender. Cool until you can handle the potatoes. Scoop insides of potatoes into a medium mixing bowl Add the protein, cinnamon and coconut spread, mix well. Add the unsweetened almond milk, stir in. Top mixture with rows of crushed pecans and unsweetened coconut. Bake until hot, about 15-20 minutes. Do not over bake as edges will get hard and not eat well.
