Strawberry Chip Cake Cookies

These Strawberry Cake Chocolate Chip Cookies are the most amazing cookie I have ever created. You get the texture of cake, but the portability of a cookie. I haven’t tried any variations yet but I am already thinking Blueberry cake, Raspberry cream, Spiced Blackberry…. I could go on and on. Well here it goes

Strawberry Chip Cake Cookies

2 c Almond meal

2 1/2 scoops About Time Strawberry whey protein isolate

1/2 c unsweetened carob chips

1/2 c Ricotta cheese

4 Fresh strawberries, average size (50 cent piece), cleaned stem removed, cut into half or 3rds

1/4 c coconut oil – melted

1/4 c Olivio brand Coconut spread

2 T Coconut Flour

2 T Vanilla extract

5 Packets Stevia

1/2 t salt

1/2 t baking powder

1/2 t baking soda

 

Preheat your oven to 350 degrees. Spray 2 light colored baking sheets with non stick spray. Place all dry ingredients (including carob chips) into a medium size mixing bowl, blend together well. Place coconut spread into the dry mix and blend in with a pastry blender, fork or 2 butter knives. Once completed, in a separate bowl, mix together the ricotta cheese, coconut oil and vanilla extract. Add to the mixture and fold together. Place fresh strawberries into a food processor or blender until broken down into a puree, add to mixture and fold in. Using a small cookie scoop, scoop batter onto trays, (recipe yields 41-42 cookies so 21 per tray). no need to flatten or do anything with the dollops. Bake for 8 minutes, I turned and rotated my trays every 2 minutes. Leave cookies on trays when completed, let cool on wire racks for 5-10 minutes. Remove cookies from baking sheets and place on wire racks or cookie plate if you have any left by this point…..
