Roasted Peppers Stuffed with Quinoa
These Roasted Peppers Stuffed with Quinoa are quite tasty. You can serve these as an appetizer at any party or pair them with chicken as a complimentary side dish.
6 count Baby pepper mix from Trader Joes, or any peppers of your choice
Preheat convection oven to 425 degrees. Cut peppers in half length wise. Remove seeds. Place open side up on a well sprayed baking sheet. Place in oven and roast for 15 minutes. While these are cooking make the quinoa
2/3 c Quinoa
1 1/3 c chicken stock
Cook quinoa as directed on package in the chicken stock
Add:
2 T parmesan cheese
1/2 t garlic powder
1/2 t onion powder
1/2 t red pepper flakes
Stir well. Fill each pepper with mixture until mixture is used up. Place back into the oven and roast an additional 10 minutes. Remove from oven and enjoy
