Pomegranate Coconut Vanilla Almond Clusters

1 cup roasted whole almonds

3 T unsweetened coconut

3 T honey

1/4 c dried pomegranates or cranberries, chopped slightly

2 T nut butter, any type

1 T chia Seeds

1 T vanilla extract

1/2 scoop About Time Vanilla whey isolate

Preheat oven to 325 degrees. Spray a cookie sheet with non stick spray. Add all items to a heat proof bowl or a medium size pot. Put over low-to medium heat stirring continuously, for 2 minutes. Pour onto cookie sheet and spread into a single layer (like 1 large cookie) bake 5 minutes, toss and keep together. Bake 5 more minutes, toss break into clusters. Bake 5 more minutes, remove from oven. Cool completely on cookie sheet. enjoy
