Lemon Cookie Sandwiches

Are you looking to impress at a get together? If so, these Lemon Cookie Sandwiches are the ticket. Soft cookies with a creamy center bursting with flavor!

1 c almond flour

2 T coconut flour

1/4 t salt

1/4 t baking powder

1/4 t baking soda

4 packets Stevia

1 heaping scoop About Time vanilla protein

1/4 c vanilla Greek yogurt

2  T coconut oil

2 T coconut spread (or some kind of butter)

zest of 2 lemons

juice of 1 lemon

Preheat your oven to 350 degrees. In a large mixing bowl place all dry ingredients including lemon zest in and blend well with a fork. In a separate smaller bowl, add yogurt, coconut oil, coconut spread and juice from lemons. Using a rubber spatula, scrape yogurt mixture into the dry ingredients. Blend well using rubber spatula. Gently Spray a light colored baking sheet with non stick spray. Using a small cookie scoop, scoop batter onto the tray. When finished, lightly tap each cookie and gently press down. When finished bake for 10 minutes, turning tray half way through cooking time. Remove from oven and place trays on cooling racks.


Strawberry Coconut cream

1 can coconut milk, keep in fridge

2 T honey

4-6 strawberries, de stemmed

Remove coconut cream, (not the water in bottom of can) and place in a medium sized bowl. Mix with hand held beater till soft. Add honey into cream and blend till smooth. Puree strawberries in blender or food processor. Pour into cream and fold together. Place in a rectangle shaped pan so cream is at least 1/4 in thick and place in freezer till frozen. When ready to serve dessert, remove from freezer, cut out circles with a cutter, make sandwiches and serve
