Quinoa: the 5,000 year old  super crop, muscle grain….the complete protein! It is actually a SEED, gluten free, And includes all eight essential amino acids, so it is a great switch up for those looking to lean out.  It’s also a great source of dietary fiber, magnesium and potassium.  It cooks in half the time as rice, has a delicious nutty flavor, and can be subbed for many times in your daily cooking.  I personally use it in any recipe that calls for brown rice, my favorite being stuffed peppers!

Here is a great recipe for a Quinoa Egg Bake:

2cups cooked quinoa

8 egg whites

2 whole eggs

2 cups of your favorited veggies either diced r sliced thin

(I use zucchini, raw spinach and red peppers)

salt and pepper or some zesty Mrs. Dash to your preference.

top with low fat cheese.

mix all ingredients, spread into a greased/ non- stick spray casserole dish.  Bake 30 minutes at 350 degrees!
