Italian Mini Meatloaves

Mediterranean Mini Meatloaves

Prep Time: 15 minutes

Cook Time: 30 minutes or until cooked through

Total Cook Time: 45 minutes

1 lb extra lean ground beef or lean ground turkey. Aprox: $3-5

3/4 cup seasoned bread crumbs

2 eggs or egg whites

1/2 cup water

Add in 1 tsp dried oregano leaves

3/4 cup chipped roasted red peppers

Top with 3/4 cup low fat crumbled feta cheese

 

 


 

Directions:

Preheat oven to 375.  mix meat, bread crumbs, water, eggs and seasoning until well blended.  Press evenly into 12 medium muffin cups/muffin tray sprayed with non-stick spray; make indentation in center of each with back of spoon or fingers.  Spoon roasted red peppers in Meatloaves.  Bake 30 minutes or until cooked through (160 degrees F).  Top with cheese and continue baking until cheese is melted.  Let stand 10 min before serving.

 

Makes 6 servings, 2 Meatloaves each
