Hot Avocado Sweet Potato dip

1/2 avocado

1/2 c sweet potato

10 grape tomatoes

4 jalapeno slices

1 scallion

1/2 t salt

1/4 small onion

1 clove garlic

1 T parsley

juice from 1/2 lemon

4 T Parmesan cheese  (2 for recipe mix, 2 for topping dip)

Mix all items together in a food processor. Scoop and fill the avocado shells (both halves). top with remaining 2T Parmesan cheese. Broil for 4-5 minutes. Enjoy with fresh cut veggies
