Green Tea Pistachio Coconut Cookies
A wonderful traveling dessert that will fit into every parties menu or midday snack choice. These Green Tea Pistachio Coconut cookies are moist and tasty.
1 c + 1 T unsweetened almond milk
4 Green Tea, tea bags
Place milk in a small sauce pot with opened tea bags. over low heat cook about 10- 15 minutes to remove flavor from tea bags. Strain out tea bags and cool milk. you should have 1 c milk remaining
1 c coconut flakes, split into 1/2 c and 1/2 c
1/2 c oat flour
2 scoops About Time Birthday Cake protein
1/4 c pistachio, shelled, ground
3 T coconut flour
2 T coconut oil- melted
2 T flax meal
1 T vanilla
3 packets Stevia
1/2 t ginger
1/2 t nutmeg
1/2 t salt
1/2 t baking powder
1/4 t baking soda
Preheat oven to 350 degrees. Spray a light colored baking sheet with non stick spray.
Mix all of the dry ingredients together well with a fork except 1/2 c of coconut fakes. Add the cooled flavored almond milk. Mix well. Add in the melted coconut oil, fold into batter. Using a small cookie scoop, scoop out batter dropping into the remaining 1/2 c coconut flakes. Just have a few stick to the top of the cookie. Place the batter side down on the tray. Repeat until all the batter is used up. I made 30 cookies.
Place tray into the oven and bake for 8 minutes, not any longer. They will carry over cook and finish nicely. Enjoy
