Gingerbread No Bake Protein Bars

These Gingerbread No Bake protein Bars were so simple to make and tasty too! Jazz them up by making cookies or using the dough for cut out’s at holiday time

1 1/3 c pecans

3 scoops About Time Cinnamon Swirl Whey protein isolate

1/4 c pus 1 T molasses

2 t cinnamon

2 t coconut oil

2 t pure vanilla extract

1/8 t salt


Place pecans in a food processor and grind until they stick to the wall of the bowl. Scrape down, add the cinnamon, coconut oil, salt and the vanilla extract. Process again until blended. Scrape sides down. Add the molasses and blend until smooth. Add protein 1 scoop at a time. Once all incorporated transfer to a mixing bowl and knead the dough to be sure all items are worked in well. At this point you can either, press into a pan and cut into protein bars or protein squares. I used a cookie scoop, rolled into balls and pressed slightly . I also rolled out the dough with a rolling pin and used a gingerbread man cookie cutter since the dough tastes like gingerbread. My dough made 14 round cookies and 6 gingerbread men or make 12 bars


if you want to garnish these I used:

1/4 c Mascarpone cheese

2 T Greek yogurt

1 Stevia packet

Mix these 3 items together and either apply with a frosting knife or pipe decorations
