Fun and Fresh Summer Salads

The first day of summer and warmer weather is right around the corner, which means outdoor farmers markets, family picnics, fun barbeques, and more will be here in no time at all! We also tend to associate summer with lighter types of foods, such as salads, which can get super boring – super quick!

Here are some FUN & FRESH Summer Salad ideas! You can get most of the items at your local farmer’s market and I can assure you, they’ll be a hit at your next barbeque!  Both recipes have some overlapping ingredients, but a completely different taste going on! You can make both salads and you’re sure to please everyone’s taste buds!

Roasted Green Bean, Tomato & Feta Salad: (serves 4)

Summer Salads

Ingredients:

  •       1 Lb Green Beans, washed & trimmed
  •       1 Cup Grape, Cherry, or Mini Heirloom Tomatoes, halved
  •       1/4 Cup Red Onion, sliced
  •       1 ½ TBS Balsamic Vinegar
  •       1 ½ TBS Olive Oil
  •       1 ½ TBS Juice from Fresh Squeezed Lemon
  •       1/8 tsp Garlic Powder
  •       1/8 tsp Pepper
  •       1/8 tsp Himalayan Pink Salt
  •       2-3 Oz Reduced Fat or Light Feta Cheese, crumbled

Directions:

Preheat oven to 350 degrees. Place green beans on a baking sheet and cook in oven for about 20-25 minutes, flipping green beans about ½ way through. Once cooked, take out and set aside.

Dressing (you can make while green beans are cooking), in a small mixing bowl or homemade salad dressing bottle, mix balsamic vinegar, olive oil, lemon juice, garlic powder, pepper, and salt. Set aside.

Once Green Beans are cooled, mix in bowl with tomato halves and red onions and pour homemade lemon balsamic vinaigrette over green beans. Toss around so all vegetables are coated nicely. Cover bowl and chill in refrigerator for about 1-2 hours.

When ready to serve, sprinkle with light feta cheese and serve slightly chilled or at room temperature.

 

Cool Watermelon, Cucumber, Tomato, Feta Salad (serves 4):

Summer Salads

Ingredients:

  •       1 Cucumber (medium), peeled & diced
  •       4 Cups Watermelon, chilled & diced into large pieces
  •       1 Cup Mini Heirloom Tomatoes, halved
  •       ¼ Cup Red Onion, sliced
  •       1/4 Cup Reduced Fat or Light Feta Cheese, crumbled
  •       4 TBS Balsamic Glaze

Directions:

Mix together cucumber, watermelon, tomatoes, onion and feta in a bowl. Drizzle with balsamic glaze & serve. Enjoy!
