Corn Meal Muffins

 

1 1/4 c unsweetened Almond milk

3/4 c corn meal

3/4 c gluten free quick oats

1/2 c About Time Vanilla Isolate

7 packets Nectresse or Truvia or (Stevia equivalent)

1 T coconut oil

2 t baking powder

1/2 t salt

Preheat oven to 400 degrees

Add all dry ingredients to a mixing bowl and blend together. Add almond milk and mix just till blended. Add coconut oil and mix through.

Spray muffin tin slightly and place in 10 liners. gently spray empty liners with non stick spray. scoop mixture into liners. Bake for 12-13 minutes. Cool on a rack. enjoy
