Coconut Crusted Quinoa and Cheese Croquettes

A savory dish great for Fall, these Coconut Crusted Quinoa and Cheese Croquettes will satisfy anyone’s hunger for comfort foods.

Coconut Crusted Quinoa and Cheese Croquettes

 

1 c quinoa

2 c water

1 t chicken bouillon

Cook according to bag directions

 

When completed, stir, add:

1/4 c Parmesan cheese or white cheddar

1/4 c cheddar cheese

3/4 t onion powder

1/2 t red pepper flakes

1/2 t garlic powder

Mix well. In a separate bowl, mix together

1/4 c almond flour

1/4 c unsweetened coconut

Preheat oven to 350 degrees. Spray a baking sheet with non stick spray. Scoop batter, drop into coconut mix and coat. Place onto the baking sheet and form into an oval. Complete until done, batter makes 8 croquettes. Bake 20 minutes until bottoms are golden, serve immediately

 

If you want these cheesier- Simply add more CHEESE! Yields 8 servings
