Chocolate Almond Flax Biscotti
4 scoops About Time chocolate protein
1/4 c whole wheat flour
1/4 c light agave nectar
1/4 c slivered almonds
3T flax seeds
2 eggs
1/8 c cocoa powder
1/8 c cooled coffee
1 t vanilla extract
1 t almond extract
1/4 t baking soda
1/8 t salt
non stick spray
Preheat oven to 350 degrees. Use aluminum foil to cover baking sheet. spray with non stick spray.
Place Almonds, flour, protein powder, flax seeds, cocoa, baking soda, and salt in a bowl and mix together.
In a separate bowl whisk the eggs, agave, extracts and coffee
mix wet ingredients into the dry ingredients. Form batter into a log (rectangle shape). Place on cookie sheet and bake for 15 minutes.
When finished, remove from oven and turn heat down to 300 degrees. Allow the log to cool at least 10 minutes.
Use a bread knife and cut logs on a diagonal about 1/2 inch thick. Place slices back on the cookie sheet and bake until they are dry. Around 15 minutes. yields around 15-20 slices
