Blueberry Banana Bundt Cake

This Blueberry Banana Bundt Cake is a morning breakfast pleaser. Enjoy this flavorful morning pastry, on a patio; along with a latte, cappuccino or espresso.

Blueberry Banana Bundt Cake


3 small bananas, mashed

1 c quick oats

2 scoops About Time Vanilla whey isolate

1/3 c plain Greek yogurt

1/3 c dried blueberries

1/4 c honey

1/4 c melted coconut oil- melt then measure out

1/4 c unsweetened almond milk

2 1/2 T chia seeds

2 t vanilla extract

1 t baking powder

1 t cinnamon

1 t salt

1 t baking soda

2 Stevia packets

Preheat oven to 350 degrees. Mash bananas in a medium bowl. Add the yogurt, honey, vanilla, coconut oil and unsweetened almond milk to the bananas and mix well. in a separate bowl, mix together the protein, oats, salt, cinnamon, baking powder, baking soda and Stevia. Add the dry mix the the banana mixture, fold together. Add the chia seeds and fold into batter, then add the blueberries and fold into batter. Spray your bundt pan with non stick spray and pour in your batter. Bake cake for 26-28 minutes, turning pan 180 degrees every 10 minutes to ensure even baking. Remove from the oven and coll on a wire rack. When cooled flip over on to a serving plate. Try serving with raspberry sauce and coconut whipped cream if you would like to use this as a dessert instead of a morning pasrty
