Black Bean Avocado Burgers

1 can black beans, drained rinsed

1 avocado

1 scoop About Time unflavored whey isolate

1/2 red pepper

1 scallion

8 baby carrots

lemon juice from 1/2 of a lemon

1 t  hot sauce- i used Tabasco

1 t garlic powder

1/t salt

1/8 t bl pepper

Preheat oven to 375 degrees. In a food processor chop together, carrots, red pepper, scallion; place in a bowl. Add black beans to processor and pulse 5 to 6 times. You will need to scrape the sides down once. A few beans will be coarsely chopped, most blended. Add to bowl of vegetables. Gently toss together. Add Tabasco, salt, pepper and hot sauce. Mix well. Peel and mash avocado in another bowl. Squeeze lemon half on top and incorporate. Fold avocado into veggie bean mixture. Add the whey isolate, fold, and scoop mixture into your hand and gently make a ball. Place on a lined or sprayed baking sheet and slightly press into a burger shape. Mixture makes 5 large burgers. ( mixture will feel soft and wet- this is okay) Bake 25 minutes. Remove from oven and let rest for a few minutes before removing from pan
