Apple Crumb Cakes
These Apple Crumb Cakes are individual, tender and so good. mix and match toppings, try a homemade fruit sauce or coconut whipped cream or ice cream!
spray 2 small ramekins with non stick spray, set aside
Place a small pot of water on the stove and bring to a boil
drop in 2 small apples and allow to boil for 45 seconds to 1 minute. Remove with a strainer spoon and set apples on a cutting board
In the bottom of the ramekins place:
1/2 t coconut spread (or a healthy type of butter)
1 T date molasses or maple syrup or honey
Cut apples in 1/4’s removing cores. Slice each 1/4 into 4 or 5 slices
Layer slices into ramekins
Sprinkle cinnamon over the apples- use the amount you think you would like ( i am a cinnamon-aholic)
In a small mixing bowl place:
1/2 c unsweetend almond coconut milk
1/4 c quick oats
1 T coconut flour
1 T coconut butter (homemade– just unsweetened coconut blended until it turns into a creamy paste)
1/4 t cinnamon
1/4 t stevia
Mix. Divide between the 2 bowls. Place 2 ramekins in a shallow pan that has some water in it. bake at 350 degrees for 25 minutes
