Coconut Berry Ice Cream


  • 1 small banana sliced thin and frozen
  • 1 cup  frozen fruit- mixed berry, cherries, blueberries, strawberries,peaches- no pits
  • 1- 5 oz plain Greek yogurt frozen
  • 1/2 cup frozen light coconut milk (pour coconut milk into a large flat dish so it will freeze in a thin layer)
  • 1 scoop About Time Birthday cake whey protein isolate
  • 1/2 t pure vanilla extract
  • 1 T unsweetened coconut for garnish

slightly thaw all items. Blend banana slices with coconut milk, yogurt, vanilla and protein powder until slightly creamy. add fruit, blend until smooth. garnish with unsweetened coconut. if your fruit is not sweet enough you may need a packet of Stevia
