Sweet and Spicy Shrimp Salads or Wraps

5 shrimp

2 strawberries

2 cucumber slices cut thin and quartered

2 cherry tomatoes, cut in half

2 T black beans

garnish with scallions and lemon juice

Mix together and enjoy as a salad or place on a lettuce leaf for a wrap

2 slices cucumber, sliced thin and quartered

2 cherry tomatoes, cut in half

scallions for garnish

1/4 of a sweet potato, diced- ( mix with 1/4 t chili powder, 1/4 t cinnamon, 1/8 t oregano, a few dashes of salt and pepper)

Bake potatoes in oven on 375 until tender or in Microwave on the speedcook or convection part- if you have that option

Mix all items together place in a lettuce wrap or eat as a warm salad

Garnish with home made ranch dressing:

1 oz Greek yogurt

1/2 oz sour cream

scallion, onion powder, garlic powder, pinch of buttermilk powder, lemon juice and salt
