Garlicky Shrimp with Parmesan Sweet Potatoes

3 oz tailess shrimp, raw or cooked

2 cloves garlic, minced

1 t coconut oil

1/2 sweet potato, cooked

2 T parmesan cheese

1 1/2 t parsley, minced

salt and pepper

Add garlic and coconut oil to a skillet, over medium high heat heat until garlic becomes aromatic, gently stirring ( 2-3 minutes). While this is happening, gently fold Parmesan cheese into your heated sweet potato, season with salt and pepper to taste.

Add shrimp to skillet, toss until shrimp are cooked or heated. Pour over sweet potato, garnish with fresh parsley. Enjoy
