I hope you enjoy these Vegan Brownies with a kick as we have. They are so tender, full of flavor and completely guilt free! A great dessert for any occasion. This is a very rich chocolaty dessert, it is sweet enough but more on the cocoa side. If sweetness is more your thing add a little more stevia to the batter and to the Ganache
Vegan Brownies with a Kick
4 scoops Chocolate About Time VE protein
1/2 c Cocoa powder Vegan or melted vegan carob chips ( if using melted carob chips add to the liquid ingredients, not the dry)
1/2 c coconut flour
1/2 c ground walnuts
2 T cinnamon
1 t baking soda
3/4 t salt
3 packets Stevia (can add more if you want them sweeter)
1/4 t + 1/8 t cayenne pepper
1/2 t chili powder
2 c unsweetened almond milk
1 c pumpkin
Juice and pulp from 2 oranges, remove any seeds
2 T pure vanilla extract
2 T melted coconut oil
Preheat oven to 325 degrees. Spray 2- 9 inch round pie pans well with non stick spray.
In a medium sized bowl combine all the dry ingredients together and blend well. Be sure to mix in the cocoa powder well.
In a larger bowl, place all the wet ingredients except for the melted coconut oil; and blend together well. Add the coconut oil, mix into the wet, then add the dry ingredients into the larger bowl. Mix until batter consistency is formed and all lumps are removed.
Using a rubber spatula, divide the batter into the 2- 9 inch pans. Spread batter to the edges of each pan. Place side by side in the middle rack of your oven. Bake for 45 minutes rotating the pans and turning 180 degrees every 15 minutes to ensure even baking. Allow brownies to cool before frosting. You can either leave these as 2 separate cakes, (possibly freeze one unfrosted) or frost both of them and double stack for an extreme presentation.
Ganache for top:
1/2 cocoa powder- vegan Or melted vegan carobs chips
1/3 c melted coconut oil
1 T pure vanilla extract
2 packets Stevia (can use more if you want it sweeter)
2 dashes salt
Place cocoa powder, stevia and salt into a small bowl. Mix well until all cocoa powder is incorporated. Add the melted coconut oil and mix in until lumps are gone. Add vanilla, mix well. Pour over your brownies and spread with rubber spatula. Allow to cool before cutting into wedges
