This Sweet potato Bread is a guilt free great tasting side dish to serve with BBQ food items, a stew or serve warm with a little coconut spread.
8 oz sweet potato mash
6 oz Greek yogurt
1/2 c coconut flour- reserve 1 T
1/2 c Parmesan cheese
1 t salt
2 stevia packets
Preheat oven to 350 degrees. Gently spray a light colored baking dish.
In a large mixing bowl add the sweet potato and yogurt, mix well. add the coconut flour (reserving 1 T), Parmesan cheese, stevia and salt. Gently fold until dough forms. Sprinkle counter top with the 1 T of reserved flour. Knead dough gently to absorb. pat dough into a round loaf. Set on baking sheet allow to sit for 3-5 minutes.
Once the oven is heated lightly coat the top of the loaf with some honey. Bake until tooth pick comes out almost clean. Check around 18 minutes. ( you make have a little crumble on the tooth pick, that’s good. Carry over cooking will finish it off)
