These Strawberry Coconut Mocha Truffles are a tasty treat for any occasion or party. You can use this batter as a protein bar batter too, just add some texture items!
2 c unsweetened coconut
2 t vanilla extract, pure
1/2 t salt
4 packets Stevia
Place these items into a food processor, Blend until batter sticks to the walls of the bowl. During this process take:
1/4 c coconut butter
1/4 c honey
place in a sauce pot, heat until melted and very warm.
After you scrape down the sides of the food processor, add the hot mixture and keep blending until smooth. Add:
3 scoops strawberry About Time whey isolate protein
1/2 c unsweetened almond milk
Blend until dough forms. Transfer to a mixing bowl. Add 2 T coconut flour and knead into dough.
in a separate bowl, mix together:
1 T instant coffee, grind with fingers to break up
1 T cocoa powder
2 Stevia packets
Scoop batter with a small cookie scoop. Drop into cocoa mixture to coat, tap on side of bowl to remove excess. Place on a wax paper lined tray or serving dish. Continue until dough is gone. Serve and enjoy. Yields 12
