Have you ever wanted a Strawberry Coconut Cake with a Chocolate Center? This Strawberry cake is guilt free, packed with protein, antioxidants and flavor!
1/2 c coconut milk- full fat version
1 scoop About Time Strawberry whey isolate Protein
2 squares Trader Joe’s 72% chocolate (or higher), shaved
1/4 t vanilla extract
1 T coconut flakes, unsweetened or chopped nuts of choice
I baked this in my microwave. I have a convection oven setting that I set to 350 degrees.
Mix coconut milk, protein, vanilla, coconut flakes (or nuts) together. Add 1/3 of the shaved chocolate. Blend. Spray 2 small tart pans with non stick spray. Divide batter between the two. Top each center with remaining chocolate. Bake for 9-10 minutes. Remove from microwave. Place 1 cake on a plate, flip the over on top of the first cake. Let set for a minute. Cut and enjoy
Try switching up flavors of protein, adding berries, different nuts or cocoa powder. The fillings can be endless too. Just keep in mind I used the chocolate as my sweetener source so depending on what you use you may need to add a bit of Stevia…. I am thinking chocolate cake with a Almond Butter center….. YUM!
