This Quinoa with Cranberries and Toasted Pine Nuts is an amazingly flavorful side dish. Allow to cool and merry the flavors, even better when reheated
2/3 c quinoa
1 1/3 c chicken stock
1/2 c fresh cranberries- can use dried also ( i would use 1/3 c of the dried)
1/4 t Cumin
1/8 t coriander
Place all items into a stock pot. bring to a boil, reduce heat and simmer until cooked.
Mince fresh parsley to get 1 T
In a dry frying pan place 1/2 c pine nuts. Over medium high heat toast pine nuts until lightly browned. Remove from heat, keep shaking until cool as they will continue to cook.
Once the quinoa is done, add the parsley and pine nuts. Allow to cool slightly. enjoy.
tip* Fresh cranberries will give this a tartness. dried cranberries are even better in this.
If you use fresh cranberries, the tartness goes away if you allow quinoa to cool then reheat side dish.
You can boil the cranberries in juice or stevia sweetened water instead of adding them to the quinoa mixture. Just drain and add them to the quinoa when it’s finished cooking
