A great holiday starter, these fantastic tasting Pear and Blue Cheese Sweet Potato hors d’Oeuvres will brighten any holiday menu or impress at a weekend get together
1 large sweet potato
2 T coconut spread- Olivio brand
2 T blue cheese- crumble well or cream until smooth
1 T molasses
1 scoop About Time Vanilla whey protein isolate
1 T cinnamon
1 t nutmeg
1/2 pear- fresh
1 t fig spread
1 t blue cheese
1/2 t salt
Pre heat your oven to 350 degrees. Either bake the sweet potato until soft or pop it in the microwave for about 6 minutes. Either crumble your 2 T of blue cheese well or mix with a fork and mash it into a cream. This will need to melt inside the sweet potatoes. Spray a baking sheet with non stick spray.
Scoop the inside of the sweet potato into a mixing bowl, add the protein and stir well. Add the coconut spread, 2 T blue cheese, molasses, cinnamon, nutmeg, salt. Mix well.
Using a round cutter or a scoop make your sweet potato rounds and be sure they are flat on top. Slice your fresh pear thin into 18 half slices. Top the rounds with the pear slices, then a drop of fig butter on the end. Slice the 1 t of blue cheese into 6 small slivers as a garnish on top of the fig butter. Place into the oven Just until sweet potatoes are reheated and blue cheese sliver begins to melt. Serve and enjoy
