These Peanut Butter Cookies are AMAZING! Probably the best cookie recipe with no added nut butters EVER! This truly is a MUST TRY recipe! Soft cookies with a chewy center, simply delightful!
1 1/3 c almond flour
1 1/3 c cashew flour
3 scoops About Time Peanut Butter whey protein isolate
2/3 c coconut oil- not melted
2/3 c quinoa flour
1/3 c maple syrup
1/3 c vanilla coconut milk
1 T Pure vanilla extract
1 T cinnamon
1 T stevia
1/2 t salt
3/4 t baking powder
3/4 t baking soda
Preheat your oven to 350 degrees. Gently spray 2 light colored baking sheets with non stick spray.
In a large mixing bowl place the almond flour. cashew flour, protein, quinoa flour, cinnamon, stevia, salt, baking powder and baking soda. Mix well.
Add the coconut oil. Using a pastry blender or 2 knives, a fork or your hands, blend the coconut oil into the dry mix. no lumps should be left.
Add the maple syrup and vanilla extract, mix in well.
Add the coconut milk, knead mixture until your dough is achieved.
Using a cookie scoops, scoop out dough balls, gently roll until round, place on your cookie sheets 4 per row. Once all cookies are made, press with a fork. Bake on the middle rack for 6 minutes. No more, no less.
cool on a wire rack.
I place 2-3 cookies in ziplock bags and freeze them so I always have a healthy snack on hand when I want it.
