Looking for something bursting with flavor? These mini Orange Coconut muffins can be made into cookies too. Serve with coconut cream for a delightful treat!
1 c almond flour
2 T coconut flour
1/4 t salt
1/4 t baking powder
1/4 t baking soda
4 packets Stevia
1 heaping scoop About Time vanilla protein
1/2 c unsweetened coconut flakes
1/3 c vanilla Greek yogurt
2 1/2 T coconut oil
2 T coconut spread (or some kind of butter)
zest and juice of 2 oranges
Preheat your oven to 350 degrees. In a large mixing bowl place all dry ingredients including orange zest in and blend well with a fork. In a separate smaller bowl, add yogurt, coconut oil, coconut spread and juice from oranges, mix well. With a rubber spatula scrape liquids into dry mixture. Blend together well with rubber spatula. Gently spray 2 mini tart pans, line with mini cupcake liners and spray gently again with non stick spray. Scoop batter into liners, when completed bake for 10 minutes, turning tray half way through cooking time. When complete, place trays on cooling racks.
