Mug Cake made by a Clean Eating Duo.
Originally Elizabeth and Tyler, writers for Clean Eating & Focused Training, weren’t always focused on nutrition and exercise, but now its a passion. Three years ago the two met and now they are both busy college students who always make time to hit the gym and find new ways to eat clean. Their goal is to share their clean eating tips with others, and About Time is excited to be a part of their blog.
Their first clean creation with ABOUT TIME was a simple mug cake.
Mug Cakes – [muhg keyk] noun. an item of soft, sweet food made from a mixture of flour, shortening, eggs, sugar, and/or other ingredients, baked in a mug and often decorated with nut butter of course. Known for their simplicity, but unfortunately are also know for being hard to master. They may come out chewy, spongey, or gooey (maybe thats not a bad thing).
The duo created a winning recipe that had to be shared.
Chocolate Chip Mug Cake
2 tablespoons AboutTime Vanilla Whey Protein
3 tablespoons Almond Meal
2 tablespoons water
2 tablespoons milk (may add a little more milk after the fact if the batter is too thick)
1/2 tsp baking powder
1 tablespoon Dark Chocolate Chips of choice.
Optional : Nuts, Fruit, PeanutButter.. the possibilities are endless!
Whisk everything together in a microwavable mug. Microwave on high for 30 seconds – 1 minute. Check the cake after 30 seconds. The cake will rise, then fall. Just make sure it doesn’t get overcooked or explode. The cake should have a soft texture when it is cooked. If there is still liquid that is not absorbed, microwave for an additional 5-10 seconds.
Top with nuts, fruit, peanut butter.. or just enjoy plain
