These Jalapeno’s Stuffed with Sweet Potato are a great appetizer for any party. Serve these at a sporting event or on a Saturday afternoon.
4 Jalapeño’s- fresh
1 sweet potato
8 large slices of pepperoni- (you can use bacon too)
6-8 small buffalo mozzarella cheese balls in oil
Preheat your oven to 400 degrees. Spray a baking sheet with non stick spray.
Slice Jalapeño’s in half, remove and discard seeds. Set on tray.
Bake your sweet potato in the microwave for 6 minutes ( or precook in the oven until soft)
Remove meat from sweet potato into a bowl. Add 2 T of flavored oil from the buffalo mozzarella balls, mix
Divide Sweet potato mixture between the Jalapeño halves and fill.
Slice the buffalo mozzarella into 4 slices each ball. place 2 on top of sweet potatoes.
Top each Jalapeño half with a slice of pepperoni then 2 more slices of buffalo mozzarella
Bake for 15 minutes. ENJOY
TIP*- Be sure Jalapeño’s are steady and won’t roll over because cheese will melt and fall off
