1/2 fresh grapefruit (peeled and seeded) 6 strawberries (I used frozen ones as it 8 degrees and winter here) 4 oz unsweetened almond milk 4 oz coconut water ice cubes 1 packet Stevia 2 dashes cinnamon
Toss all ingredients in a blender and blend to liking.
2 tablespoons AboutTime Vanilla Whey Protein 3 tablespoons Almond Meal 2 tablespoons water 2 tablespoons milk (may add a little more milk after the fact if the batter is too thick) 1/2 tsp baking powder 1 tablespoon Dark Chocolate Chips of choice. Whisk everything together in a microwavable mug. Microwave on high for 30 seconds – 1 minute. Check the cake after 30 seconds. The cake will rise, then fall. Just make sure it doesn’t get overcooked or explode. The cake should have a soft texture when it is cooked. If there is still liquid that is not absorbed, microwave for an additional 5-10 seconds. 1 c About Time Chocolate whey isolate protein 1/2 c honey 1/3 c cocoa or carob powder 2 T melted coconut oil 2 T coconut flour 1 t pure vanilla extract pinch of salt
In a medium sized bowl place the honey, vanilla extract salt and cocoa or carob powder. Mix well. Add the melted coconut oil, mix well. add 1/2 of the protein and blend add the coconut flour and blend. Add the remaining protein and mix or knead until dough forms. Dough will be slightly tacky but very manageable. Flatten into a circle about 1/2 to 3/4 inch thick. Place dough round on a piece of foil or wax paper that has been lightly sprayed with non stick spray. Let the mixture sit for 10 minutes. Cut into strips that are about 1/4 to 1/3 inch thick the cut each strip into nugget size pieces about 1 1/4 inch long. enjoy
