This Coconut Cranberry Cookie Cake is simply AMAZING! Try making this with Carob or chocolate chips it will be just like regular chocolate chip cookies!!!
1 1/2 c cashews
1/2 c almonds
3 T shredded coconut unsweetened
3 T diced dried cranberries
1 scoop About Time vanilla protein whey isolate
2 T maple syrup or agave nectar
1 3/4 T coconut flour
1 1/2 t coconut oil
1 t pure vanilla extract
1/2 t Stevia
1/4 t salt
1/4 t baking powder
Preheat your oven to 350 degrees. Spray a pie pan with non stick spray.
In a medium sized mixing bowl add the Stevia, salt, baking powder, vanilla protein, coconut flour, mix well.
In a food processor blend the cashews and almonds until they turn into a nut butter. You will need to scrape a few times plus you can add the syrup to help smooth them out. once blended add the coconut oil then the vanilla extract.
Add nut mixture to the dry mix, knead together. Add the coconut and cranberries just till worked in. Place the dough into the sprayed pie pan pressing mixture together and out to the sides of the pan.
Bake for 8 minutes, cool, cut enjoy
