A great no bake recipe of power snack bites for the busy individual on the go. These Carob Banana Butter Snowballs are a fun treat in between meals or as a dessert
2 c unsweetened coconut- (save 1/2 c plus 2 T for rolling)
1 large banana
2 scoops About Time chocolate whey protein isolate
3 T nut butter, ( peanut, almond, cashew etc)
2 T carob powder
2 T flax meal
1 T vanilla extract- Pure
1 T cinnamon
1 t salt
2 packets stevia
Mix all items together except for the coconut for rolling. Once the batter is well blended, use a cookie scoop to scoop batter and drop into the coconut flakes for rolling. Roll dough ball around in coconut and place on a tray. Once completed enjoy.
TIP*- Try other protein flavors with different nut butters for flavor variations. You can remove the carob powder too and use spices such as cinnamon, cardamom, ginger to pair up with the protein flavor you choose.
