These Scalloped Sweet Potatoes are flat out AMAZING.
2 large sweet potatoes
2 c unsweetened almond milk
1/4 t garlic powder
1/8 t black pepper
Preheat oven to 350 degrees.
Slice sweet potatoes evenly. Add all items into a large skillet and cook over medium heat for 10 minutes.
Spray a baking dish with non stick spray. Place 1/2 of the sweet potato slices and scallions into the baking dish, cover with
1/4 c parmesan cheese.
Add remaining potatoes, cover with
1/4 c parmesan cheese
take 1/4 c of almond milk mixture from the skillet and drizzle over sweet potatoes. Bake for 50 minutes. cool slightly, cut and enjoy
