These Carob Coconut Cookies are the most amazing cookie I think i have ever made. Soft, chewy, not overly sweet. Just Amazing.
2/3 c coconut butter *
1/2 c About Time chocolate whey protein isolate
1/4 c honey
3 T carob powder
1 T melted coconut oil
1 T coconut flour
1 T water
1/2 t pure vanilla extract
6 packets Stevia
dash of salt
Preheat your oven to 350 degrees. Spray a light colored baking sheet with non stick spray.
In a medium sized bowl, place the honey, vanilla extract, salt, Stevia and carob powder; mix well. Add the coconut butter and melted coconut oil; mix well. Add the water, protein and coconut flour, blend together to form your dough; knead well. Using a cookie scoop, scoop dough and roll into a ball. Gently press in the palms of your hands, place disc on the baking sheet. Once all dough is completed bake at 350 degrees for 6 minutes. remove from oven and allow to sit on the tray for 3 minutes. remove from tray and place on a cooling rack. Wait as long as you can to indulge, i waited 32 seconds. Enjoy.
